After falling in love with the Hudson Valley while attending The Culinary Institute of America in Hyde Park, Scott Rosenberg made his mark at Il Barilotto Enoteca, the now-closed Fishkill restaurant in which he worked and served as co-owner for 19 years. Now down the street from the former Il Barilotto space, Rosenberg dishes updated versions of classic Italian fare that Hudson Valleyites crave.
